Super simple salted caramel sauce – perfect for this sunshine!
We are LOVING this weather! So we’ve pulled out our favourite salted caramel sauce (as featured in our best selling Brownie box!) to whip up and pour all over our ice cream 😍

100g salted butter, cubed
120ml double cream
A pinch sea salt flakes (optional)
Heat the sugar in a heavy bottomed saucepan over medium heat, stirring constantly with a wooden spoon.
Continue to stir as your sugar starts to form clumps and then melt into a thick, amber coloured liquid. Be careful not to burn the sugar at this point.
*be very careful, the sugar will be VERY hot*
Once sugar is completely melted, immediately add the butter. Stand back as the addition of the butter will cause the sugar to bubble up.
Stir the butter into the caramel until it is completely melted, this will take about 2 minutes.
Slowly drizzle in the double cream while stirring. Again, be careful as the caramel will bubble and could splatter!
Allow the mixture to boil for 1 minute as you stir it well.
Remove from heat and stir in the salt if required. Allow to cool down before using.
Make ahead tip: You can make this caramel in advance. Make sure it is covered tightly and store it for up to 2 weeks in the refrigerator. Warm the caramel up for a few seconds before using in a recipe.
